does it matter the quality of k-probes as well?

Yes it does matter.

I found that my cheap probes would not read all the way down to max LN2 temps. That was the problem we saw when running the Phantom, it would only show -156c at max, later on my F1 at max it would only go to -176c.

Could have been a combo of things with the Phantom tho.

But all this is not much of a problem for Core I7 stuff as you don't go to max temps and I have found they read fine to -130c or so.
