When you insert your hand into the nitrogen ( which happens at a relatively fast to very fast speed ) the nitrogen moves around and once it's about to "settle" down and come in contact with your hand for the first 1 to 2 approx. seconds it evaporates nearly instantly, so you feel nothing.
Leave your hand for more than 1-2 seconds in it and you'll soon suffer
