I pour heavy until I get up to about -80, then I flash the pot with a Mapp Gas torch and pour heavy again until I get around -105 or so. Then I start dribbling the juice in, especially if I've flashed the pot one or two more times. Rapid shifts in temps are a major problem for me too, so I pour slowly, one eye on the temp, the other on the screen ... not very comfortable
